  • 2 cups quinoa, cooked
  • 1 minced onion
  • 4 bell mushrooms
  • 2 cups Chickpea Flour
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon dry sage
  • 1/2 teaspoon Cayenne pepper (optional)
  • 1 teaspoon hempseeds
  • Achiote

Step 1

Pre-heat the oven to 400F / 200C.

Step 2

In a bowl, combine the quinoa, hempseeds, bell mushrooms, sea salt. Stir in the dry sage, dry thyme, minced onion, Cayenne pepper and mix well.

Step 3

Stir in the chickpeas flour as you combine into a thick batter (add enough to create the consistency you want).

Step 4

Roll the batter so the quinoa coats the outside of the balls, then press each with your palms to form patties. Place on parchment paper and set aside for 15 minutes.

Step 5

Transfer the patties (with the parchment paper) onto the pre-heated baking sheet. Sprinkle a little grapeseed oil on top and bake for about 15 minutes)

Step 6

Bake for approximately 20 minutes, or until the bottoms are brown. Flip and bake for another 5 to 10 minutes.

Step 7

Let it cool and serve with your favorite Alkaline toppings. The flavor of the quinoa patties are earthy and slightly nutty, with a firm but fluffy texture. They make a great vegetarian main dish or side.
