Detox Quinoa Salad

INGREDIENTS:

Salad:

1 cup cooked Quinoa

1/4 cup Chickpea
1 firm Avocado (sliced or diced)
1 cup fresh Blueberries
1 Fuji Apple (diced)
½ cup Red Onions (finely diced)
1 small Shallot (finely diced)
½ cup fresh Cilantro
¼ cup dried Cherries and or Tomatoes
1 tbsp Hemp seeds

Cilantro Lime Dressing:

⅓ cup packed Cilantro leaves
¼ cup Olive oil
2 tbsp Key Lime juice
1 tsp Sea Salt
1 tsp Onion powder
1 tsp ginger powder

Step 1

Add all dressing ingredients in a high-speed blender and blend until smooth. Set aside.

Step 2

Add cooked Quinoa to a large bowl. Then add the Avocado, Blueberries, Apples, Onions, Shallot, Cilantro, dried Cherries and Hemp seeds.

Step 3

Pour blended dressing over the Quinoa salad and toss to combine. Garnish with extra Cilantro and Avocado slices as you prefer. Serve at room temperature or cold.
