Easy Alkaline Vegan Zucchini Patty

INGREDIENTS

1 Large Zucchini (Grated

1/2 Onion (Thinly Chopped)

1 Small Green Onion (Sliced thinly)

1/2 tsp Seasalt

1/2 Cup Kamut Flour (or Chick Pea Flour)

1/2 tsp Coriander

1/2 tsp Onion Powder

1/4 tsp Cayenne Pepper

1 Tbsp. Olive Oil

Step 1

Sprinkle some salt over your grated zucchini and onions, allow to sit for about an hour to remove some water. Put the zucchini and onion in a large, clean dish towel, and squeeze out any excess water, Put zucchini in a large bowl.

Add the remaining ingredients in the bowl. Use your hands to mix the ingredients together until evenly combined. Avoid over mixing.

Step 4

Divide and shape mixture. Set aside.

Step 5

Preheat the oven to 350ºF. Line a baking sheet with parchment. Place the meatballs on the baking sheet about one inch apart from each other. Bake the meatballs for about 15 minutes, or until lightly browned.

Step 6

Serve with Tzatziki or any of your favorite Alkaline Sauce. Enjoy!
