Easy Vegan Key Lime Pie Recipe (Best Recipe)

Ingredients

CRUST:

  • 2 cups Walnut
  • 1 cup Coconut flakes
  • 1/2 tsp Sea salt
  • 10 Dates

AVOCADO BASED FILLING:

  • 2 cups Walnuts
  • 1 large Avocado
  • 1/2 cup Coconut Oil
  • 1/2 tsp Sea salt
  • 5 Key Limes juiced
  • 1/2 cup Agave Syrup
  • 1 cup Spring water

EQUIPMENT:

BLENDER / FOOD PROCESSOR

Step 1 - Making the Crust

Let's make the crust first. Add all Crust ingredients in a blender or food processor

Step 2

Pulse for 30 seconds or until a bit crushed and malleable.

Step 3

Once done, transfer to a pan and press crust-blend using a flat spatula, measuring cup or fingers

Step 4

Allow to sit while preparing the filling

Step 5 - Making the Filling

Add all filling ingredients to a blender and pulse for 3 minutes or until smooth.

Step 6

Pour filling over the crust

Step 7

Drizzle some pureed avocado and coconut butter over the filling

Step 8

Sprinkle or add some grated/sliced key limes on top. Allow to set for at least 4 hours or overnight in the refrigerator. ENJOY!
